The translation literally of Tiramisù is “pick me up”. Idiomatically it means something like “make me happy”.

METHOD

Beat the egg whites with one tbs of sugar to stiff peaks

Whisk and mix the egg yolks with the rest of sugar until they form a white creamy batter.

Blend in the Mascarpone.
Now fold the egg whites delicately into the cream, you can use 2/3 of them

Dip the ladyfingers quickly into the black coffee, or into the vinsanto*.

they must not get soggy and place them regularly over the bottom of a rectangular dish, or in individual bowls. With the help of a spatula spread a finger thick layer of mixture onto the biscuits. Place in the refrigerator covered with a plastic wrap.

THE FINAL TOUCH

If you make the “tiramisù al caffè” you can dust it with a little cocoa powder or grated dark chocolate before serving.

If you make the “tiramisù al vinsanto” cover it with fresh strawberries or raspberries and drops of dark chocolate.

*Vinsanto is a Tuscan dessert wine, Marsala or ruby Port could be an acceptable substitute.

I suggest you to add 2 tbs of water or sugar syrup (2 parts sugar, 1 part water, boiled together) so it is not too strong

 

NOTE: if you feel worry about eating raw eggs you can buy pasteurized ones
